I think you definitly should use a typically german last name, and Gretel is usually used in Bavaria, so it should be a typical bavarian last name:
Huber
Mueller
Kaiser
Steiner
or my fav in that: Stadler.
If Gretel is actually not really a nazi: Schindler is a typical bavarian last name as well (if you know the movie Schindler's list).
My mom's last name is Keesee, pronounced "Kahsee". It comes from the german word for cheese maker.

One of the most common German last names is M眉ller, which means miller (after the person that used to mill flower in the olden days)
also Schmidt or Schmitt are very common
derived from Schmied = farriers/horseshoer
